We have used Pennsylvania Homeschoolers for many online AP courses. These are college-level courses, taught with various degrees of teacher interaction. They begin each year in August, and run on a tight schedule, though. I highly recommend them. One of the best is AP Economics, taught by Dr. Richman, and also the AP English courses taught by Debra Bell.
We've also used Potter's School, which provides a one-per-week live format. Again, it follows the school year, and may not be flexible enough for this student's needs.
For math, I recommend Chalkdust. This is a DVD-format course, with the option to call or e-mail the instructor as needed. We have never needed to do so. This is an option the student could use at their own pace. They are not inexpensive, but you may be able to find some of them used. And, they do resell well.
I do know of Thinkwell courses, which are also math, and some science, I believe. Have not used those myself, but they could be self-paced, I believe.
Debra Bell is also offering, in addition to her AP courses (she teaches both AP English courses, associated with PA Homeschoolers), pre-AP courses. Our daughter is taking pre-AP Physics this year, and we are very pleased with the course. There's either a taped or live lecture most weeks, and the teacher is very available for extra help, too. http://debrabell.com/online-classes/ I HIGHLY recommend the physics teacher, Mrs. Dincher. She is using the Apologia Physics text, but adds more assignments/knowledge to make a very full, rich course. She is a very quick grader, so there is quick feedback to the student. You might enter a conversation with her as to how flexible her course could be.
We also use Lukeion classes for Latin and for Ancient History. These are live courses, meeting once per week at a set time. The courses run by the semester, but what might also work for your particular student are some of the workshops they offer, which are 4-week mini-courses. Lukeion.org
